It has a vice-like arrangement that comes together when a handle/lever, which is in the upright position when the nut is inserted, is pushed down, thus both holding the nut in place and cracking it.
 
Go to Golden Crown Macadia's web site for an illustration of it and other devices used to crack macs. Golden Crown is a Macadamia growing co-op in San Diego County. I may be mistaken, but I believe their HQ is in Escondo, not far from the mac groves in the Fallbrook, Rainbow and Poway areas.
