A man down Tejas-way is sending me a package of golden chipotles. Apparently
these are a much different beast than your standard chipotle, and are pretty
much a local Tejas Thang.
Not wanting to waste any of these Precious Pearls of Wrinkled Delight, I'm
wondering if anyone out there is familiar with them, and has a suggestion
for the best uses for them. I just grabbed fresh mangoes and pineapple from
the store, with the idea of a grilling some chicken. But as these are a
Tejas Thang, I also want to try something with a Tejas-style recipe.
Nothing fancy, just something that will go with some vintage ZZ Top, some
good weather, and a grill. I'd appreciate anything you might care to say
about the chiles themselves, too. It will all end up on the web site in the
end, of course.
By the way, the first sauces for review should be on their way up here in a
couple of days. Jim Starke, of Spice From Paradise, was going to send up his
Carib-style products right after the 4th.
Gonna be some hot times coming...
