Ahhhh! What would make me lay out $20+ in a high-class place (where I knew the chef was a pip!)? For me it would be either some sort of Thai thing, shrimp sounds good, with a peanut-based sauce and some cool raw shredded veggies to mitigate the heat and add textural contract.
