But you know, one of the best restaurant jobs I've had was a funky vegetarian place (now defunct, sadly, but one of the owners started up a new place...hmmm..) that not only allowed the Hendrix to blare (I baked there twice a week as well as cooked...makin' bread at 3am with "Bertha" [195? Hobart monster mixer] whilst jammin to a little Electric Ladyland is an experience everyone should have...oh yeah...) but taught me mucho about spice/herb use and really got the chilehead blood going. Simplicity at it's best. Cheese ravioli with green chile and red chile sauces; all sortsa salsas (my first intro to pineapple-"chile" salsa); black-eyed pea (very chile-ed) gumbo (sadly lost the recipe), and more. Alas, I was in the last 2 years of my loooong drunk and left the place. Hindsight hurts. Silver lining, though, is the memories and the chile experience. Hey...the Chile Experience.
