Just can't pull myself away with my original cajun bible (actually, one of two cajun bibles I own), <underline>Louisiana Kitchen</underline>. I have, though, made the recipe for "Yo' Momma's Red Beans" which is on the mark, and there are a few recipes I remember caught my eyes, yet haven't been played with as of yet. Some odd looking recipes too (almost like Chef Paul was trying damn hard to hit a maximum # of recipes to fill out the book...hope not..). But based on experience w/other Prudhomme cookbooks, I'd venture to say the cookbook should be grand for such a low price, at least. Suffice it to say that you typically can't go wrong with ole Chef Paul, IMO. The recipes often look overwhelming (usu. in part to his typically long list of spices to be added...and his belief in adding veggies in stages rather than all at once, but there's good reason for this..), but my experience (well, okay, so I cook for a living and may be more willing to spend a whole lotta time on a recipe..) shows that the recipes are usu. worth the time and trouble. And as I, and others, have said before (in so many wirds): a recipe ain't nothing but a roadmap to a destination. Take the trip and then modify it the next time to suit your desires.
