But trust me: take 10 or 20 of your favorite chiles, put them in a couple of cups of oil (canola is good; peanut is okay; no olive) and bring the oil and chiles up temp until it begins to simmer. Obviously, one uses caution in doing this. And while I'm stating the obvious: "Boiling Oil Will Burn/Mutilate/Disfigure/ETC Anyone/Thing/Child/Dog/ETC if it ain't watched AT ALL TIMES; it also will Catch Fire and Burn The House Down. USE CAUTION.". Now no one can say I didn't warn them :) Anywho, let the oil simmer uncovered w/the chiles in it for a good couple hours. Yes, hours. They will turn black and look quite nasty, but all that scrumpdillyitious capsiacin will be melding with the oil of yer choice and yessiree, you'll have some fine chile oil. Make some popcorn, play Twister, have fun and praise El Grande... Or you can sink some dried chiles in some oil. That's safe too...assuming the chiles are completely dried. Boring.
