Have to agree, both on the "not that hot" and the good stuff fronts. I spent the month of October in Korea last year, and tasted many kinds of kimchi, but none that blew my socks off. Then again, it was nice to surprise the Koreans I was working with, who weren't used to a Westerner who could eat hotter food than them... Fantastic stuff, kimchi, but definitely an acquired taste- a Filipino friend of mine can't be in the same room with it...
