Penzey's suggests storing all red spices under refrigeration, as they are prone to lose flavor when stored at warm temps. Well sealed of course, sothey don't pick up unwanted flavors. Goes for coffee too, although I don't do that, since I never buy more than a weeks worth of good stuff anyway. Besides the available space is occupied by my hot sauce stock;-) Chile power, Frank >Subject: RE: [CH] refrigeration >Date: Sat, 7 Feb 1998 09:57:28 -0600 >Organization: Pure-Chem, Inc. >Sender: owner-chile-heads@globalgarden.com >Reply-To: t Schapansky <michael1@bga.com> > >I had a bad experience with moths once in a long forgotten can of nuts. > Nut something I'd care to repeat. >I do keep some spices in the freezer, some of the more expensive ones, >cardamom some teas, coffee etc. If I had to transfer my spice cabinet to >the fridge, I'd be out shopping for a bigger model. > > >-----Original Message----- >From: Edmiston [SMTP:edmiston@wardpress.com] >Sent: Friday, February 06, 1998 3:46 PM >To: chile-heads@globalgarden.com >Subject: Re: [CH] refrigeration > >Michael Schapansky wrote: >> >> Another good reason to refridgerate is to maintain potency. > >Well, that's encouraging.
