Hi Linda, I usually take drying garlic and peel the cloves. I then place folded Saran Wrap over them and whack it with a hammer (on top of a cutting board, of course). This creates allicin which is the good pungent stuff in garlic. I toss it into whatever I'm cooking after this. Sometimes I'll chew a clove and this gets the same results in creating allicin! It also insures privacy! To List: I know this isn't Chile talk, but Hey, they go together in cooking!
