I have found that I can keep peppers of any variety for a long, long time in the fridge if they are handled properly. Do not wash them first - I have made a little "hammock" from a mesh onion bag that hangs below one of the middle shelves in my fridge. I wrap each pepper loosly in a piece of paper towel and put them in the "hammock". This way they do not get bruised and bruising is what ruins a lot of peppers. I have kept some peppers for a month in this way and they are still good. Another helpful hint - Think about all those little bottles and jars of sauces, mustard, etc that get shoved around and about on the shelves - never can find what you want? I found some plastic baskets that just fit 3 across on my fridge shelves and fit exactly front-to-back. There is a basket for mustards, etc. one basket for hot sauces, one basket for oriental sauces, one for jams and jellies, one for pickles, olives, relish, and so on. Do you know how much easier it is to clean the fridge when you can pull out three baskets wash the shelf, put the baskets back, move to another shelf...... What this means is I can clean my fridge in 30 minutes so do it every week. I found the baskets at Lechters.
