At our cafe, we spray the corn tortillas with water and place them on the grill for just a few seconds. You can also spray them and pop them in the microwave for about 10 seconds. Works great for flour tortillas, but don't put water on them! We found a fantastic recipe for a roasted red pepper and horseradish sauce in the Chile Pepper Magazine. We did a bit of tweaking,(we always do) to make it really awesome. We serve it over big grilled shrimp. If you would like the recipe, let me know and I'll give our "tweaked" version.
