The clumpiness due to the essential oils indicates that the shelf life won't be all that long unless stored in a tight glass container. On the other hand, it won't be around long. I mixed 1/2 tsp into 1 Tbl tamari and tossed into some raw almonds. Roasted for 25 minutes at 250F. The heat and flavor is great. I think the use of all those different chiles creates a powder that is immediately hot but doesn't build out of control like hab powder. I really like the fact that it doesn't have nay spices in it that might restict its use to certain flavors. My next trick was marinaded tuna. Olive oil, lime juice, garlic, salt and Calvin's. Let it go 4 hours and grilled 2 minutes per side. It wasn't quite hot enough so I mixed the last of the powder into some mayo with cilantro to top the tuna. Thank you, Calvin.
