Used about half of Calvins powder this evening on the following recipe: Make meatballs...half pork half beef, if your religion objects to either of these, use ground chicken or turkey. One large onion, chopped finely...one inch or more of ginger root, chopped finely... 2 garlic colves, peeled and chopped(fine) one teaspoon of Calvins powder...one tablespoon of a good curry powder(I use Madras) half can of coconut milk, half can chicken stock(same can)half cup water with corn starch to thicken, Oh yeah chop up one chile of your choice, I used Jalapeno....cook all the vegs in a little oil, peanut, olive or whatever, slowly, add spices, and continue...slowly, the secret of aGOOD curry is slow cooking of the first ingredients. Meanwhile make meatballs, I used ground pork, ground it myself, added one slice of home baked brown bread.crumbled, salt pepper onion powder garlic powder, mix well, form into 8 meatballs and brown until cooked, add to curry mixture...the othere half can of coconut milk I used to make coconut rice...one cup rice, washed and let drain, one cup coconut milk, half cup water, dash salt dash of sugar, bring to boil, put lid on and turn to simmer for 15 minutes, turn off and let sit for 10 minutes...great rice!
