Well- he's done it again- at the big Mardi Gras party Tuesday night, Jim & Abbie Campbell unveiled a new sauce! This is a habanero sauce with onion,garlic, turmeric, and an acid source that I don't remember. Absolutely a killer sauce. Kind of an orangey-translucent sauce in a small bottle. I put about a quarter of a tsp. on a cracker, popped it into my mouth,an explosion of wonderful sweet spice and a slight "island mustard flavor", and a LOT of the "good side" of the habanero flavor. About 90 seconds later, there came this distant glow that seemed to snowball into a very, FIERY pepper sensation. A truly wonderful sauce! People lapped it up like water. I would say it was about a 7.5 -8 of 10 on the comfort scale. It had a flavor approach like the Matouk sauces, but more fire and a better sweet/sour balance. I don't remeber the name of the sauce, but I'll bet Jim will tell you, and it belongs in everyone's arsenal! At Alex S's suggestion, I'll pop over to the Clifty Creek Park campground and reserve spaces for people if they email me and let me know they are coming to the Hot Luck in April! Steve
