Dont know about Prescott, its full of retirees who all come from somewhere else, although you might try Murphy's downtown.
In Phx: Los Dos Molinos on extreme South Central Ave, for some NM style stuff, Rosita's Place on East McDowell Rd for Az/Mex, Mariscos Chihuahua also on McDowell for seafood like ceviche tostadas and the like. Drive around in the South-Central section of town and you'll see lots of little mom and pop taquerias, try some and let us know what you find. Ive also noticed that in the west central area like between Centralon the east and 27th avenue on the west and Thomas Rd on the South and who knows how far north there seem to be Thai and Viet Nam restaurants and markets sprouting like weeds. I havent tried any of them. buena suerte!
