A way I was taught to prepare nopalitos in Mexico was thus- take the nopales, canned or fresh, sliver some onions in about the same size, and begin sauteing with some oil. About the time the onions soften and begin to turn transparent, add some crushed garlic and a liberal amount of roasted and peeled green chiles, or rajas, and continue sauteing. Mix some eggs and pour over the mixture, let them set and fold over roughly omelet style. Salt and pepper accordingly while cooking. You can use the relative amount of ingredients that make you happy. Enjoy!!!!!! Steve
