The hottest horseradish I have made has been from roots where the tops have been allowed to go to seed, then broken down. The plants covered with a foot of mulch (straw) and the roots left in the ground over the winter. That "spring" horseradish is potent!. I grow the stuff in the ground but with a barrier of roofing aluminum because the stuff will spread. Leave just a bit of root in the ground and another plant grows.
