This little slice of Cajun Heaven is simply amazing.The proprietor is not bashful about ladling out a dainty dollop of this shimmering, gelatinous, mass of pure chili hell-fire. It is no exaggeration that to the uninitiated, just a little dab'l do ya. I have personally witnessed one customer down three heaping spoons full slathered on his pork sandwitch and remain seemingly unaffected by the fiery tumult within. Except for the telltale flush and ever so slight glistening beads of sweat erupting from his forehead, one would have never know he was experiencing "the Man" up close and personal. On this particular day, I indulged in the minimum dose of capsasin in my Red Beans and Rice. From my recollection, this batch had to be one of the hottest ever.
