Being a veteran eater in northern New Mexico, southern Arizona and southern
Texas, I'll suggest that there are mighty tasty dishes in all these places
that reflect the foods of Mexico, with local influences, but that there is
no local food that could represent "Mexican" any more than there could be a
representive "French" or "Italian" type of cooking in any one place in this
country. Whew! That was a long sentence, but I'll stick with it.
