I love to use chipotles in carne adovada- adds a nice smoky subtext to the sauce. They're also great in white (or red) chili, and of course the canned ones in adobo sauce can be eaten right out of the container. For homemade pizza, try either mixing pureed canned chipotles in adobo with your tomato sauce, or if you're up for it, simply substitute the one for the other. Perfect for any recipe involving roasted vegetables or smoked meats. Penzey's Spices (there was a thread about them some weeks ago) also sells chipotles, both whole and powdered. I haven't bought the powder but can vouch for the whole dried- some of the best I've ever had.
