As much as I can tolerate, I always try to follow a recipe pretty closely the first time I make it (except perhaps increasing chile content by some predictable but reasonably constant factor). My notion is that if I "improve" recipes before I try the unadulturated version, I risk reducing my exposure to new and different tastes since my improvements of course tend to move everything into the same directions where I'm already familiar (how else would I know it's an "improvement"). --- Brent
