I personally Know Smoky Hale. I keep his computer working for him. He doesn't know a lot about computers, but he KNOWS bar-b-que. He is one of the best bar-b-que chefs I have ever had the pleasure to meet. I agree fully with his views about smoke. Too much is too much. A light smokey flavor is always better than too smokey. If you want to smoke chiles, only use the wet wood for a short period of time. Just put a few chips of wood on the hot coals, and let them burn off. Don't add a second handful unless it is the second batch and you felt that the first batch wasn't smokey enough.
