Microbial inhibitors and/or acidifiers.
I don't really find it necessary to put herbs and spices in oil
beforehand. Do it right before you use it.
For popcorn, I steep chipotles in peanut oil on low for an hour. Remove
chiles and let it cool. Pop away.
