Kids, I'm not talking about the Peach State here, I mean Georgia the nation. Recently I was with the folks on the east side of Cleveland, where a Russian emigre community is growing. In a Russian deli, I combed past all sorts of sweets and preserves to single out pepper products. Not much to find, but I did come across a Georgian hot pepper paste. I'm sure it's far from fresh, but the texture and flavor are very similar to harissa from a squeeze tube. The brand name is AJIKA "Russian hot seasoning." No origin given in English on the label, though there is some information in Cyrillic. I don't have the character set to reproduce it here, so I'll just slaugter the information by putting it in English characters: Gruzinskaya Ostraya Priprava which my father translates as "Georgian hot condiment." Makes me wonder - if they're using harissa in Israel and the middle east, and this stuff is used in Georgia, then there must be similar products all through Iran, Iraq, etc., or through Turkey and into central Asia.
