Rain's suggestion is excellent, but don't stop there! Spear a couple of them chipotles out, cut 'em up and eat 'em with a steak and some fried onions. Or a few of the chilis and a big ol' spoonful of the adobo sauce is great mixed with rice and/or beans. Chipotles in adobo sauce have a rich, smokey flavor that goes great with all kinds of meats.
