Chipotle is a smoked jalapeno pepper.  (Pronounced chee-poht'-lay, not
chi-po-tel)  It ends up having a very smoky taste which everyone but me
seems to find desirable nowadays.  I love my meat smoked, but evidently not
my chiles.  You can purchase them canned (en adobo) or dried.  I've tried
both in a variety of ways (including sauces) but I continue to find them
nasty.  The most palatable effort has been with squash.

For the record, I feel that cilantro is an acquired taste.  Put me in that
"used to not like it now I can't get enough" category.
