Yes, its true, I'm back. Hong Kong was great, and I hope to visit again soon. The ChileHead angle was less than satisficatory, but the rest of the culinary experience was to say the least, quite memorable. We stayed in the Parkside which is located in the Admiralty District. Very upscale location, but just a stones throw from the Wan Chai District, which is what we would call a "Red Light" district. Needless to say we did venture into Wan Chai and claimed one Hostess bar as our very own. It was nice to get a back rub after a long day at work, (at that is all that got rubbed on me...I'm a knuckle dragger, but I only drag my knuckles at home). Anyhow the beer was cold, the women sweet, and the food was good. We ate so many dishes I can't remember them all, but there was one that really stood out in that with the addition of some fresh chile peppers it would be a real hit. I'll work out the recipe later and share with the list. We ate at some Thai restaurants and avoided the street vendors. Unfortunately McDonald's was a staple item for breakfast. Its a good thing I had some of my own powder to spice it up. I scared the staff I was training. They would have Thai Chilies or Jalapenos on the work bench and I would reach down and pop one or two in my mouth. They would stand there in awe as I chewed and swallowed the delicate fruits. Just another snack for me. Well I'm back, and ready to hear from all of you. What's going on? John "ChefChile" Whalen In Chinese they called me "Lay-TU" which means Chile, I believe.
