try ... http://countrystore.tabasco.com/Tabasco/ , look under "gift ideas" ... then "for kids". and speaking of stuffed chiles ... this season is when the Vancouver produce sellers often have BIG beautiful jalapenos available. one favourite recipe, that allows me to take full advantage of the harvest, is Jalapenos Rellenos de Minilla ( tuna stuffed ). a nice departure from the regular cheesy, armadillo-egg thing. you'll find the details at Simply Seafood mag's website. http://www.simplyseafood.com/recipes/Chiles_Jalapenos.html i've made the recipe many times. it makes a colorful display as an appetizer, when stacked into a layered conical mound and is a good way to introduce chiles to non CH friends, or add your favourite heat source to hot-it-up for yourself. a couple of comments about the recipe ... 1: the "method" of preparation (boiling the chiles) is the important factor here. once the chiles are prep'd, you can stuff 'em with whatever you like! vary the ingredients to suit what's at hand. 2: make sure your stuffing is dryer than you think it should be ... you'll see. and overstuff! they look way better. 3: i recommend cutting the quantity of sugar in half (at least). btw, dark brown sugar works quite nicely. 4: cut the chiles with a knife, and core with a small teaspoon ... way faster & easier. 5: wear gloves when prepping the chiles! (the voice of experience) :) a note about Simply Seafood magazine: i've been a subscriber for a few years, it's a GREAT mag & well worth the cover price. but they've stopped publishing in Oct/98. no idea why. hopefully they aren't going out of business. if you like the recipe, it might be wise to make a copy now ... just in case. regards peter g
