Sorry, I forgot to tell you what to use instead of.....I use wine, either red
or white...good stuff, very drinkable, no lousy wine that you would not drink,
and the most important  thing is USE DRY wine, sweet win just does not do well
when used in a recipe...the only exception to that is  when I use ginger wine
as a marinade, it is sweet. Doug in BC
