Picked up a bunch of Laksa leaves at Coles the other day, under the name Hot Mint. Typical supermarket dumbing-down. Amazing things! My goodness, are we talking pungent, or what? Anyway, not having a good recipe for laksa, I decided I'd make soup anyway, with the leaves and anything else I could find in the fridge. Anyway, here's what I came up with, it needed a little debugging, but it was yummy all the same... Interesting Green Soup Thumb-sized lump of galangal Bigger lump of ginger Big handful of cilantro (I really am getting used to the stuff!) Smaller handful of fresh basil Same amount of laksa leaves About six leaves of mint Three kaffir lime leaves Two shallots Two green jals (I wold have used thai, but I didn't have any) Chicken stock One chicken thigh, chopped into bits Half a nutmeg, grated (duh) Juice of half a lime Coconut cream Rice noodles Blend the veggies in the food processor. Put about two tablespoons of the mixture into a saucepan with the chicken, stock, nutmeg and lime juice. (keep the rest in the freezer for next time) Simmer until chicken is done. Add coconut cream to taste. Boil the noodles separately and add to the soup. Throw in a few chuks of mushroom, broccoli, pumpkin or any other veggies that need using up, and simmer a few minutes more. Eat! I overdid the kaffir lime in mine, and cooked the noodles in the soup. Avoid doing either of these. Another thing: those laksa leaves don't keep, do they? they were in the fridge for a day and a half, and I just managed to save enough good ones for the soup, and some kinda wilted ones for drying. jbc
