Here is a sample Satay Udang (Dancing Prawns) Serves 6-8 4 serrano red chilies, seeded and sliced 4 tablespoons cilantro roots 1 3/4 teaspoons paprika 3 garlic cloves, peeled and minced 2 tablespoons brown sugar 2 tablespoons fish sauce 3 tablespoons lemon juice 2 tablespoons Indonesian soy sauce (optional) 3 tablespoons corn oil 2 pounds jumbo shrimp (about 32) In food processor, blend chilies, cilantro, paprika, garlic, brown sugar, fish sauce, lemon juice and Indonesian soy sauce. Process until mixture forms a paste. Transfer to a bowl and stir in oil. Let shrimp marinate in paste 15 minutes. Grill or sear the shrimp for 2 minutes on each side or until they turn pink.
