There's a bottle that I've had open in my fridge for the entire time, and except for a slight darkening in color, it's just fine. And don't ask me why it's taken me so long to use it up!!! Well, okay, since you asked, it's because I've got umpteen other sauces open in there that are all in competition with each other, and they've all got to wait their turn.
