Dunno about salt cod (I may be in Darkest Noo England but I ain't that much of a fanatic) but you can do a dandy baked ham by plugging it with cloves while baking and basting it with a sweet/hot hab sauce like Br'er Jim's Firey Habanero for the last half hour. Add a side of baked winter squash with lotsa butter and the aforementioned sauce instead of maple syrple.
