Chuck is correct on this one. Sushi originated in southeast Asia as a method to preserve fish. Fresh fish were layered with large amounts of salt and later pressed between layers of steamed rice. Vinegar was added to the rice to create the tart flavor to stimulate the taste created by the fermentation. The pickled foods (fish or beef) were pressed on top of the rice, and wasabi was added as an antibacterial agent as well as for the flavor.
