So my question is, > are there a lot of you that just like food burning hot or are you like me and > like hot food, but like the extra flavor that, say, "Lotte's Hot Pepper Sauce" > adds to it? I don't add heat for the sake of heat alone. I like hot and spicy food, but I consider "heat" to be a basic taste, like "sweet", "salty", "bitter", etc. There are plenty of hot sauces that I don't use because they are plenty hot but just taste like crap (Dave's Insanity and Crying Tongue come to mind) and yet I will often shred a habbie or two into my scrambled eggs because I like the fruity taste and the searing heat. If I am eating something and the only flavor is "HOT", or the heat so dominates everything that the rest of the dish is out of balance, I find it annoying and obnoxious after a short time, irritating in a sort of "toothache" way and rather unpleasant. === Speaking of pure cap, I have a jar of it in my fridge right now. It has a rich, peppery undertone along with all that fire. I like a few drops blended into the butter I use for making garlic toast. :-) === Dave Sacerdote davesas@tiac.net Resist or Serve.
