I don't know if this is Doug's recipe or not; I got it from a friend in Georgia a couple a years ago, and it makes a mean pot o' green. I might have posted it here when I first joined in but I don't remember: GREEN CHILE STEW 2 lbs. lean chuck lard or cooking oil 1/2 medium onion, chopped 1 can diced tomatoes (11 oz) 1 small pkg. frozen or 1 can white shoepeg corn (10 or 11 oz) 12 large green chiles, roasted, peeled and cut in pieces; or one 7 oz. container frozen chopped green chile; or two 4 oz. cans chopped green chile 1 tsp. garlic salt 1 tsp. salt 6 - 7 cups water Cut the meat up into very small pieces (about 1/2 inch cubes) and brown in a little oil in a large, deep heavy pan. Add the onions. When the meat and onions have been browned, drain off any excess fat. Add the rest of the ingredients and the water. Bring to a boil and simmer for at least a half hour.
