C doesn't so much "spoil", as it does combine with atmospheric oxygen (oxidize). Way back in my college days, as a student slave at the local University Research Institute's laser lab, I used to use Vit. C as an antioxidant in photographic developer solutions. I suspect that the Vit. C would be better preserved if the chiles were chopped & submerged in oil (or something else that would act as a barrier to atmospheric oxygen). But then, of course, you might have that slight problem called botulism. I think it would all depend on how tightly closed you kept the jug of "spiced" rum. Jeff Johnson Germantown, OH
