Thanks to everyone who responded to our question. It seems that it's about half and half. Right back where we started from! By the way, I don't know if you know this but we buy dried chipotles not canned to cook with. We get them wholesale, of course, and order them from New Mexico. That's where we get our anchos from also. The anchos are a little less in price and are beautiful, pliable peppers. The chipotles we use in 2 of our enchilada sauces, mix with smoked pork for spicy pork enchiladas and make a creamy chipotle sauce for shrimp. Cameron brought up a point that I'm not too clear on. He said that chipotles are dried jalapenos and so they are not peppers. I guess I'm of the opinion that since jalapenos are peppers, I would think that drying them still makes them peppers. Same with the drying of the poblanos that make anchos. Any thoughts here?? Thanks again. Judith
