<<sell unsweetened chocolate here at all. You can get 85% cocoa solids, 
<<but they just fill up on sugar to try and mask the <gasp> bitterness...

Try Penzeys Spices.  My sister, the baker, spoke highly of their
chocolate.  For my part, I can vouch for the quality of their spices
and dried chiles (see: I got chiles into this!)  They're also a very nice
