Hello, Today a client paid his bill with ostrich meat. I have almost 13 pounds of loin that I would like to make into jerky. I have the dehydrator, plenty of dried chiles and Calvin's powder to use with this, but I need a recipe. Anyone out there have a good jerky recipe?
