My favorite chiles (in taste) are (in no particular order): serranos, Habaeros (Red S are the best for taste not just heat), chiltepin, piquin and deArbol. I prefer all my chilies at the ripe stage.. tho my favorite green chiles are serranos and ancho (called pablanos in CA, and are perfect for chile rellenos). In fact the ONLY chile I've tasted that I really disliked was some anchos i grew and let ripen .. the sweetness in them just didn't work for me. Coyote Howlin' for Habaneros
