This wonderful burnt chile in oil can be purchased in Mild, Medium, or Hot. It is a thick black paste that is so good on shrimp chips as a snack. It also can be added to dishes for sweet-HOT flavor. However the one you make yourself is much tastier and makes a wonderful dip for raw veggies such as green beans, Asparagus, carrots, cabbage wedges, etc. It is made w/phrik khee nu (Thai Birds).
