Ingredients 1 young chicken ~2 1/2 pounds. 1 tsp. salt 1 1/2 tbsp soy sauce 1 tbsp cornstarch 4 tbsp. oil 4-5 red chiles, finely chopped 2 slices ginger root, peeled 2 tbsp crushed yellow bean sauce 1 tbsp sugar 2 scallions, cut into 1/2 to 1" lengths Skin and bone the chicken. Cut the chicken meat into small cubes, 1/2 to 3/4". Marinate with salt, soy sauce and cornstarch. Heat 3 tbsp oil and stir-fry the chicken for about 2 minutes and remove from heat. Heat the remaining oil, put in the chiles and ginger root. When they turn dark, add the bean sauce, stir a few times and put the chicken back in followed by the sugar and onions. Continue stirring until well blended. Serve hot. Scott Peterson Age is a very high price to pay for maturity.
