The last of the cayennes I picked ripened up just fine hanging from a string on the wall (threaded thru the stem), *provided* they had a trace of color change to them. If there was no color change started, they were less successful in ripening before rotting (80% ripe/20%rot). No detectable loss of heat or flavor. The anchos were less cooperative, 60/40 ripe/rot.
