This one will be sweet, but crispy due to the overnight salting.


 Green Tomato Pickles
 
pickling salt                      
green tomatoes                     
----BRINE----                      
  1 cup vinegar                            
  2 cup water                              
  1 cup sugar                              
  2 tablespoon pickling spices; in a bag
  1 single whole cloves                       
 
 Slice tomatoes 1/8-inch thick and layer in a bowl, sprinkling each         
 layer with salt.  Let stand overnight, then drain and rinse with cold      
 water. Drain again.                                                        
                                                                            
 Boil the ingredients for the brine.  Add tomatoes and cook until           
 tender. Pack in hot jars and seal.
