And speaking of chipotles. A light cheese sauce with chipotles in it is
a great topper for lightly steamed cauliflower.

Push sprigs of rosemary and cloves of garlic under the skin of a
chicken, plus a few sprigs and cloves inside, close the opening (or
truss it) with string, rub it with fat (butter, schmoltz, lard,
whatever) and season it with your favorite spice rub (I use Emeril's
Essence). Bake that bird and enjoy (with herbed new potatoes?)

If the people doing the critisizing are that worried about it, tell them
to do the spell-checking and send you a corrected copy..... The ability
to spell correctly or not does NOT make a person good or bad.
