I am still puzzled over the statement that habaņeros are the most popular chiles of all. As long as there is good fresh green and red chile I will stick to them. I don't mind habaņeros but they sacrifice flavor for heat. I found most of the habaņero sauces at the fiery food show too sweet. I don't like sweet sauces. I do like sour and bitter ones. I bought a great jerk sauce from Jim's Mild to Wild Booth. I also bought a great hot seasoning for peanuts from the first booth on the first row. It vanished before I got home. Ah, well... Elsa
