I made this the other night and used very little heat on my husbands fish and a little more on mine. I show the recipe as I adapted it so that my hubby could deal with it. If I was making it for me, I would've used more chili powder on each fillet: * Exported from MasterCook * Un-Fried Catfish Recipe By : Adapted from In The Kitchen With Rosie by Rosie Daley Serving Size : 4 Preparation Time :0:00 Categories : Busy Day Entrees Cajun Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- vegetable cooking spray 1/4 cup cornmeal 1 tsp dried thyme 1 tsp dried basil 1/2 tsp garlic powder 1/2 tsp lemon pepper 1 tsp chili powder -- ancho or chipotle 4 4 oz filets catfish 1/2 tsp paprika Preheat oven to 400°F.
