The above statement implies that every gardener should therefore have a knowledge of chemistry sufficient to understand the meaning of pH and the ability to calibrate and use a delicate piece of scientific equipment. Don't bother; for the simple reason that you do not need to know accurately what the pH is for gardening or canning food. "About 6" or "below 4" is good enough.
