My neighbor sent a 5 tray dehydrator home with my wife a few days back, I couldnt wait to make Beef Jerky with it... So last night I sliced up a 2.5lb chuck roast into thin strips, and placed it to marinade for 6 hours then let it run all night drying, Some of the thinner pieces were done this morning and much to my suprise, it was kick ass! Here is what I used to marinade. I had to throw in what I had on a short notice hehehe 2.5lb chuck roast sliced thin 8oz - Jim 'the elder' Cambells' Smokin' Chipotle Sauce ( Kick ass for jerky) 2 tbls powder garlic 4 tbls wichishire sauce Salt Pepper Orange Hab Powder to taste 2 tbls cumin Thats all there is to it. The Chipotle sauce added the sweetness to it and gave it some bite , but the sprinkling of hab powder kicked it up as Emeril would say " to notches unknown to mankind" For those of you with dehydrators you will love this Jerky :-)) Come on warm weather, my plants are ready to put in the ground... :-)) Tom Cuneo selectricsigns.com
